I mentioned in this month’s favourites that I’ve been a big smoothie fan lately. I’ve experimented with quite a few combinations, but this is my absolute favourite currently. It really tastes like summer. It’s also full of a myriad of vitamins and other nutritional benefits. You need this smoothie in your life this winter.
Every year around the end of January I start to feel like I reaaaallly need a vacation. All I want to do is lie on a beach somewhere for a week with a cold drink in my hand. The past two years I’ve been really lucky and was able to achieve this dream, but this year it just doesn’t look like it’s going to happen. So, this smoothie will have to do.
This smoothie is like a healthy version of a Pina Colada. Honestly, I would choose a real Pina Colada any day, but apparently it’s frowned upon to have rum for breakfast. Who knew? Anyways, Pina Colada’s pack a lot of sugar and calories, but by using some delicious natural ingredients you can get a similar effect and actually call it breakfast.
I swear it almost makes me forget that it’s -30°C and we only see the sunlight for a few hours a day.
- 1 cup coconut milk
- 1 tbs vanilla Greek yogurt
- 1 cup frozen pineapple
- 1 small banana
- honey, to taste
- Add all ingredient to blender and blend until smooth. Enjoy!
